Current Research and Professional Interests
- Drying of food and biological materials including spray drying,
microstructure studies of food products including powdered materials, heat
and mass transfer process fouling, cleaning of process surfaces including
membranes, additives to mitigate fouling in heat exchangers, transdermal
drug delivery, human gastrointestinal tract (GIT) engineering and modeling,
pH influences on protein gel structure, micro-encapsulation using
micro-fluidic device, ink-jet device applications in food technology and
biotechnology, biofilm development in food processing, freeze
concentration and freeze drying, modeling of transfer processes and
chemical reactor systems including fermentation processes. Most recently,
some work on baking mechanisms and spontaneous heating processes are also
being conducted.

Academic Contribution and Technical Publications
- Supervised to completion as the main supervisor over 14 PhD and 37 ME
students, and as one of the two main supervisors over 6 PhD students.
- Have over 250 international journal publications and 170 refereed
conference publications, three NZ/Aust provisional patents, 1 book
(Springer) and 1 book (Blackwell), and a number of book chapters. There
are also over 50 technical reports prepared for private companies.
